Muesli Salad

Ingredients

  • ½ cup Muesli
  • 1 teaspoon extra virgin olive oil
  • 1 Tablespoon honey
  • ½ cup raw almonds
  • ½ Tablespoon ground cinnamon
  • A pinch of vanillin
  • 2 nectarines
  • ½ cup cherries pitted
  • 5 strawberries
  • ½ cup raspberries
  • 5 oz vanilla Greek yogurt

Method

1. Preheat oven to 350F
2. In a bowl combine, 1/2 cup Muesli, 1 teaspoon oil, 1 Tablespoon honey, 1/2 cup almonds, 1/2 Tablespoon ground cinnamon, and a pinch of vanillin. Incorporate well together.
3. Place a sheet of parchment paper on a baking sheet. Lay out the oat mix and bake for 6-10 minutes in the oven, just until it starts to get browned up.
4. Cut the fruit into bite size.
5. On top of fruit, place vanilla yogurt, then spread around the almond and oat mix on top.
